"Mediterranean baked fish with sweet potato chips and Lettuce salad" is a flavorful dish that combines fish with a medley of Mediterranean-inspired ingredients and rich tomato sauce. This is a main course accompanied with roasted sweet potato and Lettuce with lemon dressing.


1 Sweet potato 1

2 Olive Oil 2 tbsp

3 Onion 1

4 Garlic Cloves 2

5 Red Peppers 1 tbsp

6 Yellow Peppers 1tbsp

7 Tin tomato 100g

8 Balsamic Vinegar 1 tbsp

9 Caster Sugar 1 tsp

10 Tomato Puree 3 tsp

11 Fish Steak (Mahi mahi) 150g

12 Salt & Pepper To Taste

13 Lemon 1

14 Lettuce 20 g


For Sweet Potato Chips

1. Season the sweet potato and roast until it turns brown.

For Mediterranean baked fish

2. Saute the Garlic, Onion in Olive Oil

3. Add Red & Yellow Peppers and stir in the tomatoes, vinegar, sugar and tomato purée and season with a little salt and plenty of pepper.

4. Add the fish (Mahi Mahi) steak to the pan and gently turn it over so it is covered in the sauce. Cook, covered with a lid, for 10 minutes, or until the fish is cooked through and the sauce slightly reduced.

For Lettuce with Lemon dressing Salad

5. Put the Lettuce leaves in a bowl and toss with the oil, a squeeze of lemon juice and a pinch of salt.

6. Serve the fish in the sauce with the sweet potatoes and salad.
